ABSTRACT
The main objective of this experiment is to monitor the growth of microbiological organisms in orange juice before and after pasteurization and to examine whether our unpasteurized and pasteurized samples meets the requirements of Institute of Turkish Standarts (TSE).

Thenon-pathogenic bacterium; Lactobacillus planatarium was inoculated into the orange juice before pasteurization. Pasteurization procedure was performed and samples were taken before pasteurization, after pasteurization and before inoculation of bacterium to fresh orange juice. After dilutions were prepared, pour plate method is used to determine microbial load of the samples.
