Abstract
Measurement of the oil content of citrus oil emulsions presents considerably greater problems than in single strength juices. Their high oil [left]content and tendency to rapidly change in physical character make accurate sampling extremely difficult. The authors propose comminuting a fairly large sample of product, and transferring a small aliquot to alcohol in a tared container. This solubilizes the oil and inactivates enzymes permitting analysis by distillation and bromate titration at any convenient time. Analyses of
desludger liquid discharge to which a known weight of oil had been added showed 95 - 97% recovery of the added oil. Analyses of 14 repli cate samples of emulsion (ca 3-4% oil) showed a standard deviation of 0.015% oil.
