THE ROLE OF SUGAR IN CANDY MAKING
(By Mr. Louis Lang, Chief Research Chemist,
Mr. i$underle, members of the Pennsylvania Man~fa~.
turing Confectioners~ Association, ladies and gentlemen.
After your very congenial and persuasive Mr. Dresel invited
me to address you I was a bit worried, not for myself,
for I was reminded of a story. It seems that a
certain engineer was called to Texas to make a survey
of an industry there, and to report to the president of
the company involved. After spending several days on
that survey he met with three gentlemen including the
president. After a very short time the man to his lefttook
a pistol from his pocket and placed it on the table.
The engineer thought nothing of it. And then the men in
front of him took a pistol from his pocket and placed
it on the table. And still he thought nothing of that,
but when the third man took a pistol from his pocket and
placed it on the table he stopped and said ‘tGentlemen,
I dontt understand what you are doing with these pistols!!,
whereupon the man to his left said !!Partner, there is
nothing for you to worry about, it is the man that brought
youl ‘t (laughter)
