Tray Drier

I.SUMMARY


Object of experiments:
To produce drying and drying rate curves for a wet solid being dried with air of fixed temperature and humidity.
To plot the drying process on psychrometric chart and use the results to perform a basic mass balance on the air.

In the experiment, the aim is drying a food material in a tray drier, in order to decrease the water activity of food material to inhibit microbial action and enzyme activity and by decreasing volume of the material to facilitate storage and transportation
