Additions

Additions are compounds added to juice or wine to improve fermentation or preserve quality. Every so often, nature provides the winemaker with the perfect grapes. Oftentimes there is one or more adjustments that a winemaker chooses to make during fermentation however. There are a few additions that guarantee a healthy fermentation or bring out a specific character in wine even during perfect growing years. The common additions used in winemaking are acid, sugar, water, sulfur dioxide, yeast nutrients, and commercial enzyme preparations.
